All my kiddos love this recipe, they call them,” baby pancakes” because of the small size. They are the perfect portions, they like the taste, and don’t get crumbly.

Only 5 ingredients! Being a mom of three, I understand the importance of fast, easy, and simple recipes. If you like, you can experiment with different fruit purees. I have used applesauce and pumpkin puree in place of the banana.

The best thing about this recipe is that it does not have any added sugar to it. Looking at most breakfasts out there today, everything has sugar added to it and it is more than the amount we should be consuming in a day. The sweetness from these pancakes comes solely from the banana, giving it just the right amount of sweetness.

  1. In a medium bowl, mash the banana and whisk in the eggs.
  2. Add all dry ingredients along with1/2 to 3/4 cup milk or water. Mix until blended.
  3. On a nonstick pan over medium heat, make smaller cookie-sized pancakes. Cook both sides.
  4. This makes about 30 cookie-sized pancakes or about 10 medium-sized pancakes. These are great to freeze and heat up later for a fast and easy breakfast.Enjoy!
